Alpine is a style of cheese making referencing the original large format wheels produced in the French, Swiss, Italian and/or Austrian Alps with unpasteurized cow's milk. Variations on the theme come from colder regions of the United States. Their flavors are deep, rich with a brown-butter, nutty taste and a dense mouthfeel.
